strawberryTime for a very unconventional . I’m pretty sure i’m the only one that eats these sort of treats — I’m one of those “what do I have left in the fridge and how well will it combine to form a mega snack” kind of people.

That being said, this is delicious. Well, I think so at least. Let me know if you’re brave enough to try it :)

Ingredients:

  • 4 tortillas
  • 2 tb Butter, melted
  • 2 tb Cane
  • 3/4 ts Cinnamon
  • 2 c Strawberries, chopped
  • 1 tb Chopped fresh mint
  • 1/2 ts Grated lime rind (I’ve used lemon rind and before and it tastes just as good, I promise)
  • 1 tb Lime
  • 1 1/2 ts

Method:

Brush both sides of each tortilla with butter. Combine and cinnamon; sprinkle over each side of tortilla. Bake on lightly greased baking sheet in 375 degree F oven for about 10 minutes or until and golden. Cut into quarters.

Combine strawberries, mint, lime rind and and ; cover and refrigerate for 1 hour.

Put the in a bowl and dip your tortillas in it. Yummmmy!

Organic Recipe Friday: Bus-fare Salsa

Salsa_SubwayFare_42006_v2I was buying in the jar for the longest time. In fact, I was buying it (at around $3 or $4 a jar) until this past week. That is when I decided to start making my own. I mean, it is cheaper, healthier and I can make it as hot (or not) as I want!

I had a few jars cleaned out and ready to go (leftovers from my grocery store days) and set out on a mission to make my own … and to make it better than what I was buying.

With all ingredients, I put together this that my roommate already loves and I think you will, too. Here’s what you need (buy all of the ingredients if you can):

Ingredients:

4 tomatoes
1 can of corn
1 can of kidney beans
1 onion
1 pepper
1 red pepper
1 jalapeno pepper
Cilantro
Salt
Black Pepper

Method:

1. Mix one tomato, a chunk of cilantro, and 1/2 cup of kidney beans together with a blender or mash them until they’re liquid-esque. Keep this mixture on the side.

2. Chop up all of the other ingredients and mix them all together in a big bowl.

3. Add in your liquid mixture a little bit at a time until you’re happy with the .

4. Grab a margarita, some salty tortilla chips, dip and enjoy! Or store it in the fridge to use on chicken, omelettes, baked potatoes…the possibilities are endless.
